Pasta method:
Take 4 medium zucchini and cut ends from zucchini. With a vegetable peeler or sharp knife, slice the zucchini very thin, lengthwise, making “noodles”.
Heat a large skillet over medium-high heat. Lightly mist with spray & cook, add zucchini.
Sauté and stir until zucchini is tender & crisp. Remove from heat and keep warm.
Ingredients:
- 140 grams extra lean ground beef
- ½ medium onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- ½ cup water
- 1 packet sweetener
- 1 tsp dried oregano
- 1 tsp Italian herbs
- ½ tsp dried basil
- Salt and pepper to taste
Method:
Set a large saucepan over medium heat. Add crumbled ground beef, onion, and garlic. Cook,
stirring occasionally, until beef is brown and no longer pink. Drain grease if needed. Reduce
heat to low. Add tomatoes, water, sweetener and seasonings. Stir to mix.
Simmer for 10 minutes for flavours to blend. Arrange zucchini noodles on a serving plate & top with mince sauce.
