Ingredients:
- One serving of egg (1 egg yolk, 2 egg whites)
- 1 x green pepper, washed
- Salt & pepper to taste
- Dash of Tabasco
Method:
Cut the bell peppers into 3cm rings – use a sharp knife to make clean cuts (this will hold the egg in place). Crack your eggs into a cup. Heat a pan on medium heat & coat with spray & cook. Give the pan a few minute to heat up before adding the food. Place the pepper rings in the pan & allow to cook until browned lightly & turn the rings over so both sides are cooked evenly. Pour your egg into the middle of one of the rings & cook the egg according to your preference. Using a non-stick spatula, lift the egg ring out of the pan & serve on a plate with the remaining bell pepper rings. Season with salt & pepper to taste. Add a dash of Tabasco for a bit of spice.
