Refreshingly Delicious!
Ingredients:
Citrus Ginger Dressing
- 1/2 cup freshly pressed mandarin/ orange juice
- 2 tbs MCT Oil
- 1 tbs apple cider vinegar
- 1 tbs amino liquid
- 1 tsp grated fresh ginger
- 1 tsp minced garlic
- 1/3 cup spring onions, finely chopped
- chopped chillies – amount to taste
Salad Ingredients
- air fried or smoked chicken breast, chopped or shredded
- romaine lettuce, chopped
- baby spinach
- mandarin/ oranges, peeled and segmented.
- red pepper, thinly sliced
- sliced cucumber
- 1/2 tbs black sesame seeds
- salt and pepper to taste
Method:
Citrus Ginger Dressing
- Whisk all ingredients in a small bowl, or combine in a mason jar and shake well before serving.
- You can also make in advance and chill until ready to serve. Store in the fridge in an airtight container. Be sure to shake well or mix before serving.
Assembling Salad
- We love to use a smoked chicken breast to make this salad – it’s so easy and comes together in 5 minutes – However, if you don’t have one on hand you can easily air fry or roast a couple of chicken breasts in the oven with some coconut oil, salt, and garlic. Slice or shred once cooked.
- Build salad by layering spinach and lettuce in a bowl. Then add chopped/ sliced ingredients and chicken. Add black sesame seeds last.
- Mix dressing well and pour over salad – it’s deliciously magnificent. Enjoy!
